Description

A comforting and flavorful Potsticker Noodle Bowl featuring a harmonious blend of lo mein noodles, ground pork, and fresh vegetables.


Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha
  • 4 cups coleslaw mix


Instructions

  1. Cook noodles according to package instructions; set aside.
  2. In a large skillet, brown the ground pork with 1/4 cup of green onions in peanut oil over medium heat.
  3. In a bowl, whisk together the chicken broth, mirin, soy sauce, garlic, ginger, sesame oil, and sriracha.
  4. Add the cooked noodles and coleslaw mix to the skillet with the browned pork.
  5. Pour the sauce over the mixture and toss everything together for 2-3 minutes until well coated.
  6. Serve hot, garnished with the remaining green onions.

Notes

For a sugar-conscious version, consider using stevia, monk fruit, or allulose instead of sugar. Avoid honey or maple syrup.
