- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook noodles according to package instructions; set aside.
- In a large skillet, brown the ground pork with 1/4 cup of green onions in peanut oil over medium heat.
- In a bowl, whisk together the chicken broth, mirin, soy sauce, garlic, ginger, sesame oil, and sriracha.
- Add the cooked noodles and coleslaw mix to the skillet with the browned pork.
- Pour the sauce over the mixture and toss everything together for 2-3 minutes until well coated.
- Serve hot, garnished with the remaining green onions.
Notes
For a sugar-conscious version, consider using stevia, monk fruit, or allulose instead of sugar. Avoid honey or maple syrup.
