Description

A warm and hearty Cajun Potato Soup, filled with flavors of andouille sausage, vegetables, and bold Cajun spices, perfect for chilly evenings.


Ingredients

  • 1 package of diced andouille sausage
  • 3 cups of diced potatoes
  • 1 cup of chopped onion
  • 1 cup of chopped bell pepper
  • 1 cup of chopped celery
  • 2 tablespoons of Cajun spices
  • 1 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • 4 cups of chicken or vegetable broth
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Cook diced andouille sausage over medium heat until browned.
  2. Add chopped onion, bell pepper, and celery, cooking until vegetables are tender.
  3. Stir in diced potatoes and Cajun spices, then add the broth.
  4. Bring to a boil, then reduce heat and simmer until potatoes are soft.
  5. Stir in heavy cream and cheddar cheese until melted and smooth.
  6. Season with salt and black pepper to taste. Serve hot.

Notes
