- 1 package of diced andouille sausage
- 3 cups of diced potatoes
- 1 cup of chopped onion
- 1 cup of chopped bell pepper
- 1 cup of chopped celery
- 2 tablespoons of Cajun spices
- 1 cup of heavy cream
- 1 cup of shredded cheddar cheese
- 4 cups of chicken or vegetable broth
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook diced andouille sausage over medium heat until browned.
- Add chopped onion, bell pepper, and celery, cooking until vegetables are tender.
- Stir in diced potatoes and Cajun spices, then add the broth.
- Bring to a boil, then reduce heat and simmer until potatoes are soft.
- Stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and black pepper to taste. Serve hot.
