Instructions
- Cook the chopped bacon over medium heat until crispy.
- Remove the bacon and set aside, leaving the drippings in the pot.
- Add the chopped onion and minced garlic to the pot and sauté until translucent.
- Add the diced potatoes and corn, then pour in the broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with the crispy bacon and fresh parsley.
