Description

Delicious and nostalgic Poptart Cookie Bars with a buttery cookie layer and sweet strawberry jam, finished with a glaze and colorful sprinkles.


Ingredients

Scale
  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2½ cups + 2 tablespoons all-purpose flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • ⅔ cup strawberry preserves
  • 1 cup powdered sugar
  • -2 tablespoons whole milk
  • ½ teaspoon vanilla extract
  • Rainbow sprinkles (for decorating)


Instructions

  1. Line a square metal 8×8 baking pan with parchment paper to hang over all sides.
  2. Preheat the oven to 375°F (190°C).
  3. Cream the butter and sugar in a stand mixer for 3 minutes until light and fluffy, then scrape down the bowl.
  4. Mix in the eggs and vanilla extract until just combined, then scrape down the bowl.
  5. Combine the flour, salt, and baking soda until the dough starts to come together.
  6. Chill the dough in the fridge for 20 minutes to firm up.
  7. Press half of the cookie dough into the pan.
  8. Lift out the first layer using the parchment and let it chill in the freezer.
  9. Replace the parchment strips and press the rest of the cookie dough into the pan.
  10. Spread the strawberry preserves over the top.
  11. Place the other half of the cookie dough on top and press firmly.
  12. Bake for 25-28 minutes or until the top is golden brown.
  13. Let cool completely on a wire rack.
  14. Remove the bars from the pan and whisk together powdered sugar, milk, and vanilla until smooth.
  15. Pour the glaze over the bars and sprinkle with rainbow sprinkles.
  16. Let set for 1-2 hours before cutting into 15 bars and enjoy!

Notes

You can easily swap out the strawberry preserves for your favorite flavors, such as raspberry or blueberry.
