- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 packet active dry yeast
- 1 cup warm almond milk
- 1/3 cup coconut oil, melted
- 1/2 teaspoon salt
- 1/2 cup pistachios, chopped
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup maple syrup
- Powdered sugar for dusting (optional)
Instructions
- Activate the yeast by mixing it with warm almond milk and a pinch of sugar. Let it sit for 5-10 minutes until frothy.
- Combine flour, sugar, and salt in a large mixing bowl.
- Add the activated yeast mixture and melted coconut oil to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover it, and let it rise for about 1 hour, or until doubled in size.
- Roll the dough into a rectangle, spread with melted coconut oil, and sprinkle with chopped pistachios, brown sugar, and cinnamon.
- Roll the dough tightly and cut it into slices. Place in a greased baking dish.
- Cover and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake for 25-30 minutes until golden.
- Drizzle with maple syrup and dust with powdered sugar if desired. Allow to cool slightly before serving.
