- 4 cups Rice Chex cereal
- 1 cup creamy peanut butter
- 1 cup white chocolate chips
- 1 cup powdered sugar
- 1/2 cup crushed pistachios
- 1/2 teaspoon vanilla extract
Instructions
- In a large bowl, measure out the Rice Chex cereal and set aside.
- In a microwave-safe bowl, combine the peanut butter and white chocolate chips. Microwave in 30-second intervals, stirring until smooth.
- Add the vanilla extract to the melted mixture and stir well.
- Pour the melted mixture over the Rice Chex cereal and gently stir until all pieces are coated.
- In a separate bag or bowl, combine the powdered sugar and crushed pistachios.
- Add the coated cereal to the bag or bowl and shake until evenly coated with the sugar and pistachios.
- Spread the mixture onto a baking sheet to cool before serving.
