Ingredients

- 1 cup pistachio nuts, shelled
- 1/2 cup sugar
- 1/4 cup unsalted butter, melted
- 1 cup heavy cream
- 1/2 cup cream cheese, softened
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 pre-made pie crust, crumbled
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, blend the pistachio nuts until finely ground.
- In a mixing bowl, combine the ground pistachios, sugar, and melted butter.
- Press the mixture into the bottom of small cups to form a crust.
- In another bowl, beat the heavy cream, cream cheese, vanilla extract, and salt until smooth.
- Fill each cup with the cream mixture.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with additional crushed pistachios if desired.
Notes
- For a sweeter taste, adjust the sugar according to preference.
- These cups can be made a day in advance for convenience.
