Description

Delicious and creamy pistachio pie cups that are perfect for any occasion.


Ingredients

Scale
  • 1 cup pistachio nuts, shelled
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pre-made pie crust, crumbled


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the pistachio nuts until finely ground.
  3. In a mixing bowl, combine the ground pistachios, sugar, and melted butter.
  4. Press the mixture into the bottom of small cups to form a crust.
  5. In another bowl, beat the heavy cream, cream cheese, vanilla extract, and salt until smooth.
  6. Fill each cup with the cream mixture.
  7. Chill in the refrigerator for at least 2 hours before serving.
  8. Garnish with additional crushed pistachios if desired.

Notes

  • For a sweeter taste, adjust the sugar according to preference.
  • These cups can be made a day in advance for convenience.
