- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, at room temperature
- 2 large eggs
- ½ cup milk
- 1 ½ tsp baking powder
- ¼ tsp salt
- 1 tsp vanilla extract
- 1 cup of your favorite filling (sprinkles, jam, chocolate chips, etc.)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Cream the butter and sugar together in a large bowl until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Pour in the milk and vanilla extract; mix until fully incorporated.
- Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid over-mixing.
- Scoop the batter into the prepared muffin tin, filling each liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, use a small knife or cupcake corer to remove a small portion of the center of each cupcake.
- Fill each cupcake with your preferred filling and replace the cut-out piece of cake.
- Frost the top with your favorite buttercream or icing.
- Top with colorful sprinkles or decorations of your choice.
Notes
For those with diabetes, consider using sugar substitutes like stevia or monk fruit.
