Ingredients

- 2 cups chopped peppers (bell peppers, jalapeños, or any variety)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
- Chopped fresh herbs for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and cook for 1 minute.
- Stir in the chopped peppers and cook for another 5 minutes until they soften.
- Add the broth, cumin, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- Use an immersion blender to puree the soup to your desired consistency, or leave it chunky.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with fresh herbs if desired.
