Description

A warming and flavorful soup made with a medley of fresh peppers and spices, perfect for chilly days.


Ingredients

Scale
  • 2 cups chopped peppers (bell peppers, jalapeños, or any variety)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped fresh herbs for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent.
  2. Add the minced garlic and cook for 1 minute.
  3. Stir in the chopped peppers and cook for another 5 minutes until they soften.
  4. Add the broth, cumin, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes.
  6. Use an immersion blender to puree the soup to your desired consistency, or leave it chunky.
  7. Taste and adjust seasonings as needed.
  8. Serve hot, garnished with fresh herbs if desired.
