Description

A comforting Italian dish featuring penne pasta in a spicy Arrabbiata sauce with protein-rich chickpeas.


Ingredients

  • 8 oz penne pasta
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 28 oz crushed tomatoes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Parmesan cheese or nutritional yeast for serving


Instructions

  1. Cook the penne pasta according to package instructions.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chopped onions and minced garlic, sauté until softened.
  4. Stir in crushed tomatoes and red pepper flakes. Simmer for about 10 minutes.
  5. Add canned chickpeas to the sauce and cook for another 5 minutes.
  6. Drain the pasta and add it to the skillet. Toss to combine.
  7. Serve garnished with chopped parsley and Parmesan cheese or nutritional yeast for a vegan option.
