- 8 oz penne pasta
- 1 can (15 oz) chickpeas, drained and rinsed
- 28 oz crushed tomatoes
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tsp red pepper flakes
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- Parmesan cheese or nutritional yeast for serving
Instructions
- Cook the penne pasta according to package instructions.
- Heat olive oil in a large skillet over medium heat.
- Add chopped onions and minced garlic, sauté until softened.
- Stir in crushed tomatoes and red pepper flakes. Simmer for about 10 minutes.
- Add canned chickpeas to the sauce and cook for another 5 minutes.
- Drain the pasta and add it to the skillet. Toss to combine.
- Serve garnished with chopped parsley and Parmesan cheese or nutritional yeast for a vegan option.
