Delicious bite-sized treats that combine the flavors of pecan pie with the ease of no-bake preparation.
Ingredients

- 1 cup pecans
- 1 cup pitted dates (soaked)
- 2 tbsp coconut sugar or monk fruit
- Pinch sea salt
- 1 tsp vanilla
- 1 tsp cinnamon (optional)
- 1 1/4 cup chocolate chips
Instructions
- Add everything to a food processor, besides the chocolate, until a sticky dough forms. This may take a few minutes; be sure to scrape down the sides every now and then.
- Roll the sticky mixture into balls and place on a lined cookie sheet.
- Flatten them down slightly with your palm.
- Place them in the freezer to firm up a little, about 15 mins.
- Melt the chocolate until smooth.
- Dip each cookie bite into the mixture and return to the cookie sheet.
- Place a pecan on top.
- Put back in the freezer until hardened!
Notes
Quality chocolate enhances the flavor. Experiment with toppings like shredded coconut or crushed sea salt.
