- 3 ripe bananas
- 1 cup chunky natural peanut butter
- 2 large eggs
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or line it with cupcake liners.
- Mash the ripe bananas in a large mixing bowl until smooth.
- Add the chunky natural peanut butter to the mashed bananas and mix until well combined.
- Crack the eggs into the mixture and stir until fully incorporated.
- Pour in the honey and vanilla extract, mixing well.
- Sprinkle the baking powder, baking soda, cinnamon, and salt over the mixture.
- Stir all the ingredients together until just combined, being careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake in preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a sweeter muffin, increase the honey slightly. Store in an airtight container for up to 3 days at room temperature, 1 week in the refrigerator, or freeze for up to 3 months.
