Description

Deliciously moist and fluffy flourless muffins made with peanut butter and ripe bananas, perfect for a quick and healthy snack.

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with cupcake liners.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add the chunky natural peanut butter to the mashed bananas and mix until well combined.
  5. Crack the eggs into the mixture and stir until fully incorporated.
  6. Pour in the honey and vanilla extract, mixing well.
  7. Sprinkle the baking powder, baking soda, cinnamon, and salt over the mixture.
  8. Stir all the ingredients together until just combined, being careful not to overmix.
  9. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  10. Bake in preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a sweeter muffin, increase the honey slightly. Store in an airtight container for up to 3 days at room temperature, 1 week in the refrigerator, or freeze for up to 3 months.
