Description

A nostalgic and simple treat that combines creamy peanut butter with fruit-sweetened jam, wrapped in a delightful cup.


Ingredients

Scale
  • 1/3 cup coconut oil, melted
  • 1 cup unsweetened peanut butter (or almond or cashew butter)
  • 1/2 cup fruit-sweetened jam
  • OPTIONAL: a few pinches of salt
  • OPTIONAL TOPPING: coarse salt


Instructions

  1. Line muffin tin with 10 cupcake liners or arrange 10 silicone cupcake liners on a baking tray.
  2. Gently melt coconut oil in a small pot then add to peanut butter and whisk until creamy smooth. Add salt if desired.
  3. Spoon one tablespoon of peanut butter mixture into each prepared muffin liner.
  4. Place in freezer for 10 minutes.
  5. Remove from freezer and spoon two teaspoons of jam into the middle of each peanut butter layer, flattening gently.
  6. Top with remaining peanut butter mixture, one tablespoon in each cup, to cover jam.
  7. Place in freezer for at least 30 minutes to harden.
  8. Store in an air-tight container in freezer or fridge.

Notes

For a sugar-free version, consider using stevia or monk fruit. Ensure coconut oil is gently melted to maintain the perfect texture.
