  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1/2 cup rolled oats
  • 1/4 cup butter, melted
  • 1/4 cup brown sugar (for streusel topping)
  • 1/4 teaspoon cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the peanut butter, sugar, and brown sugar until smooth in a large bowl.
  3. Beat in the eggs and vanilla extract until well combined.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this to the wet mixture, stirring until just combined.
  5. Fold in the chopped strawberries and strawberry jam.
  6. Pour the batter into the prepared loaf pan.
  7. Mix the rolled oats, melted butter, brown sugar, and cinnamon together in a small bowl to create the streusel topping. Sprinkle it over the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before slicing and serving.
