Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Mix together the peanut butter, sugar, and brown sugar until smooth in a large bowl.
- Beat in the eggs and vanilla extract until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this to the wet mixture, stirring until just combined.
- Fold in the chopped strawberries and strawberry jam.
- Pour the batter into the prepared loaf pan.
- Mix the rolled oats, melted butter, brown sugar, and cinnamon together in a small bowl to create the streusel topping. Sprinkle it over the batter.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing and serving.
