Description

Deliciously sweet Peach Crumb Bars are a perfect summer treat with a crumbly oat topping and juicy peach filling.

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Combine peaches, sugar, cornstarch, vanilla extract, cinnamon, and salt in a bowl. Set aside.
  3. Mix flour, oats, brown sugar, butter, baking powder, and baking soda in another bowl until crumbly.
  4. Press half of the mixture into the bottom of the prepared baking dish to form the crust.
  5. Spread the peach filling over the crust.
  6. Crumble the remaining mixture on top of the peaches.
  7. Bake in the preheated oven for 30-35 minutes or until golden brown.
  8. Allow to cool before cutting into bars. Serve warm or chilled, optionally with a scoop of vanilla ice cream.

Notes

For those with diabetes, consider using sugar-free alternatives like stevia or monk fruit in place of sugar.
