Description

A delightful dessert combining juicy peaches and creamy cheesecake in a comforting cobbler bar.


Ingredients

  • 4 ripe peaches, sliced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter, melted
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 egg


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Mix flour, oats, brown sugar, granulated sugar, cinnamon, and melted butter until crumbly; press half of this mixture into the bottom of the prepared baking pan.
  3. Beat the cream cheese, powdered sugar, vanilla extract, and egg until smooth. Pour the cheesecake mixture over the crust.
  4. Layer the sliced peaches over the cheesecake, then crumble the remaining oat mixture on top.
  5. Bake for 30-35 minutes or until golden brown.
  6. Let cool before cutting into bars and serving.

Use fresh, ripe peaches for the best flavor. Let bars cool completely before cutting.
