Description

A vibrant and healthy salad combining kale, peaches, and blueberries, dressed with a tangy vinaigrette.


Ingredients

Scale
  • 2 cups kale, chopped
  • 1 cup peaches, sliced
  • 1 cup blueberries
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup nuts (e.g., walnuts or almonds)
  • 2 tablespoons olive oil

Instructions

  1. Combine in a large bowl the chopped kale, sliced peaches, blueberries, and red onion.
  2. Whisk together in a small bowl the olive oil, balsamic vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
