Description

Deliciously crispy roasted chickpeas infused with garlic, lemon, and Parmesan, perfect for snacking or as a side dish.


Ingredients

  • 15 oz chickpeas
  • 1.5 tbsp olive oil
  • 3/4 tsp garlic powder
  • 3/4 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp parmesan cheese
  • 1/4 tsp smoked paprika


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain the chickpeas and rinse them thoroughly under cold water.
  3. Pat the chickpeas dry with a kitchen towel.
  4. Whisk together olive oil, garlic powder, lemon zest, salt, black pepper, and smoked paprika in a mixing bowl.
  5. Add the dried chickpeas to the bowl and toss until they are well-coated.
  6. Spread the coated chickpeas in a single layer on a baking sheet.
  7. Bake for 20-25 minutes, stirring halfway through, until golden and crispy.
  8. Remove from the oven and sprinkle Parmesan cheese over the hot chickpeas.
  9. Allow them to cool slightly before serving.

Notes

For maximum crunch, ensure the chickpeas are well-dried. Store leftovers in an airtight container at room temperature.
