Description

A vibrant Italian salad featuring crusty bread, ripe tomatoes, cucumbers, and fresh basil, perfect for summer gatherings.

Ingredients

Scale
  • 4 cups crusty bread, torn into bite-sized pieces
  • 4 medium vine-ripened tomatoes, diced
  • 1 cucumber, chopped
  • 1 small red onion, sliced
  • 1 cup fresh basil leaves, torn
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Tear the crusty bread into bite-sized pieces and place it in a large bowl.
  2. Dice the vine-ripened tomatoes and add them to the bowl.
  3. Chop the cucumber and slice the red onion; mix them in with the bread and tomatoes.
  4. Add the torn fresh basil leaves.
  5. In a separate small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to create the vinaigrette.
  6. Pour the vinaigrette over the salad and toss gently to combine.
  7. Let the salad sit for about 15 minutes to allow the flavors to meld before serving.

Notes

Using slightly stale bread works best for texture. Allowing the salad to sit enhances flavors.
