Description

Delicious flaky pastries filled with spiced paneer, perfect for snacks or gatherings.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup cold butter, cubed
  • 1/2 cup cold water
  • 1/2 teaspoon salt
  • 1 cup crumbled paneer
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • 1 egg, beaten (for egg wash)


Instructions

  1. Mix the all-purpose flour and salt in a large bowl.
  2. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Pour in the cold water little by little until the dough forms.
  4. Knead the dough briefly on a floured surface until smooth, wrap in plastic wrap and refrigerate for 30 minutes.
  5. Heat oil in a pan over medium heat, add cumin seeds, and sauté for a minute.
  6. Add crumbled paneer, garam masala, turmeric powder, red chili powder, and salt. Stir to combine and remove from heat, then mix in chopped coriander leaves and allow to cool.
  7. Preheat the oven to 400°F (200°C).
  8. Roll out the chilled dough on a floured surface into thin rectangles and cut into 4-inch squares.
  9. Place a spoonful of the paneer mixture in the center of each square, fold to create triangles and seal edges.
  10. Brush tops with beaten egg.
  11. Bake for 20-25 minutes or until golden brown and puffed up.

Notes

Chill your butter for flakier pastry. Don’t skip the resting time for the dough.
