- 2 cups all-purpose flour
- 1/2 cup cold butter, cubed
- 1/2 cup cold water
- 1/2 teaspoon salt
- 1 cup crumbled paneer
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon chopped coriander leaves
- Salt to taste
- 1 egg, beaten (for egg wash)
Instructions
- Mix the all-purpose flour and salt in a large bowl.
- Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Pour in the cold water little by little until the dough forms.
- Knead the dough briefly on a floured surface until smooth, wrap in plastic wrap and refrigerate for 30 minutes.
- Heat oil in a pan over medium heat, add cumin seeds, and sauté for a minute.
- Add crumbled paneer, garam masala, turmeric powder, red chili powder, and salt. Stir to combine and remove from heat, then mix in chopped coriander leaves and allow to cool.
- Preheat the oven to 400°F (200°C).
- Roll out the chilled dough on a floured surface into thin rectangles and cut into 4-inch squares.
- Place a spoonful of the paneer mixture in the center of each square, fold to create triangles and seal edges.
- Brush tops with beaten egg.
- Bake for 20-25 minutes or until golden brown and puffed up.
Notes
Chill your butter for flakier pastry. Don’t skip the resting time for the dough.
