Description

Ingredients

  • 1 cup oyster mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: protein (chickpeas, tofu, or chicken)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat in a large skillet the olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the sliced oyster mushrooms and cook until they are tender and slightly browned.
  4. Pour in the vegetable broth and bring to a simmer. Season with salt and pepper.
