Delightfully easy mini cheesecakes made with Oreos, perfect for sharing or indulging.
Ingredients

- 15 Oreo cookies, crushed
- 2 cups cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- Chocolate shavings or crushed Oreos for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Combine crushed Oreo cookies and a few tablespoons of melted butter to make a crumb base. Press the mixture into the bottom of each cupcake liner.
- Beat the cream cheese, sugar, and vanilla extract in a mixing bowl until smooth.
- Whip the heavy cream in another bowl until stiff peaks form, then fold it into the cream cheese mixture.
- Spoon the cheesecake filling over the Oreo crust in the muffin tin, filling each liner almost to the top.
- Refrigerate for at least 120 minutes or until set.
- Top with chocolate shavings or crushed Oreos before serving.
Notes
Consider using sugar substitutes for a lower-sugar option.
