Description

A delicious blend of French onion soup and pasta, this dish is rich in flavor and perfect for weeknight dinners or impressing guests.


Ingredients

  • 8 oz pasta (e.g., fettuccine or penne)
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups beef or vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup grated Gruyère cheese
  • Fresh parsley for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil over medium heat in a large skillet. Add sliced onions and sauté until they are caramelized, about 15-20 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in the broth and bring to a simmer, then add the heavy cream and thyme. Stir and allow to cook for about 5 minutes.
  5. Season with salt and pepper.
  6. Add the cooked pasta to the skillet and toss to combine with the sauce.
  7. Remove from heat and stir in the grated Gruyère cheese until melted.
  8. Garnish with fresh parsley before serving.

Notes

This dish can be made vegetarian-friendly by using vegetable broth instead of beef broth. It’s great for leftovers and can be reheated easily.
