- 8 oz pasta (e.g., fettuccine or penne)
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 2 cups beef or vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil over medium heat in a large skillet. Add sliced onions and sauté until they are caramelized, about 15-20 minutes.
- Add minced garlic and cook for another minute.
- Pour in the broth and bring to a simmer, then add the heavy cream and thyme. Stir and allow to cook for about 5 minutes.
- Season with salt and pepper.
- Add the cooked pasta to the skillet and toss to combine with the sauce.
- Remove from heat and stir in the grated Gruyère cheese until melted.
- Garnish with fresh parsley before serving.
Notes
This dish can be made vegetarian-friendly by using vegetable broth instead of beef broth. It’s great for leftovers and can be reheated easily.
