Instructions
- Preheat your oven to 350°F (175°C).
- Cream together 1 cup of unsalted butter, brown sugar, and granulated sugar in a large bowl until smooth.
- Add 1 tablespoon of molasses and 2 teaspoons of vanilla extract; mix until fully incorporated.
- Beat in 2 large eggs, one at a time, until combined.
- Whisk together 2 cups of all-purpose flour, 1/2 teaspoon of cinnamon, 1 teaspoon of baking soda, and 1/4 teaspoon of salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in 3 cups of quick oats until evenly distributed.
- Scoop tablespoon-sized portions of dough onto baking sheets lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes or until cookies are lightly golden.
- Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks.
- While the cookies cool, beat together 3/4 cup of softened unsalted butter and 2 ounces of cream cheese until creamy.
- Gradually add 3-4 cups of powdered sugar and mix until smooth.
- Add 1 teaspoon of vanilla extract and 1/4 teaspoon of salt; mix until well combined.
- If needed, add 1 tablespoon of cream to reach desired consistency.
- Assemble the cookies by spreading a generous layer of frosting on the flat side of half the cookies and topping with the other cookie half.
