Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 tablespoon molasses
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 3/4 cup unsalted butter (softened)
  • 2 ounces cream cheese (full-fat, brick style)
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together 1 cup of unsalted butter, brown sugar, and granulated sugar in a large bowl until smooth.
  3. Add 1 tablespoon of molasses and 2 teaspoons of vanilla extract; mix until fully incorporated.
  4. Beat in 2 large eggs, one at a time, until combined.
  5. Whisk together 2 cups of all-purpose flour, 1/2 teaspoon of cinnamon, 1 teaspoon of baking soda, and 1/4 teaspoon of salt in a separate bowl.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Fold in 3 cups of quick oats until evenly distributed.
  8. Scoop tablespoon-sized portions of dough onto baking sheets lined with parchment paper.
  9. Bake in the preheated oven for 10-12 minutes or until cookies are lightly golden.
  10. Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks.
  11. While the cookies cool, beat together 3/4 cup of softened unsalted butter and 2 ounces of cream cheese until creamy.
  12. Gradually add 3-4 cups of powdered sugar and mix until smooth.
  13. Add 1 teaspoon of vanilla extract and 1/4 teaspoon of salt; mix until well combined.
  14. If needed, add 1 tablespoon of cream to reach desired consistency.
  15. Assemble the cookies by spreading a generous layer of frosting on the flat side of half the cookies and topping with the other cookie half.

Notes

For a healthier version, consider using sugar substitutes like stevia or monk fruit.
