Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Combine oats and boiling water in a bowl; let stand for 20 minutes.
  3. Mix flour, baking soda, cinnamon, and salt together in another bowl.
  4. In a large mixing bowl, cream together butter, brown sugar, and granulated sugar. Add eggs and vanilla extract, mixing until well combined.
  5. Stir in the oat mixture, followed by the dry ingredients until just combined.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
