Description

Delicious and tangy mini key lime pies that are perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup key lime juice
  • 1 tablespoon lime zest
  • Whipped cream for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom and sides of mini pie pans.
  4. Bake the crusts for 8-10 minutes until golden brown.
  5. In another bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth.
  6. Pour the filling into the baked crusts.
  7. Bake for an additional 10-12 minutes until set.
  8. Let cool, then refrigerate for at least 2 hours.
  9. Top with whipped cream before serving.
