Description

Delightful and colorful tortilla roll ups filled with creamy bean and cheese mixture, perfect for any occasion.


Ingredients

  • 4 large tortillas
  • 1 cup refried beans
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup diced bell peppers
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Combine the refried beans, cream cheese, shredded cheese, salsa, green onions, bell peppers, garlic powder, onion powder, salt, and pepper in a mixing bowl. Mix until well combined.
  2. Spread the mixture evenly over each tortilla.
  3. Roll up each tortilla tightly and wrap in plastic wrap.
  4. Chill in the refrigerator for at least 30 minutes.
  5. Slice the rolls into pinwheels once chilled.
  6. Serve with additional salsa or dipping sauce if desired.

Notes

These roll ups can be made a day in advance and stored in the refrigerator. They can also be frozen for up to a month.
