Ingredients

- 4 large tortillas
- 1 cup refried beans
- 1 cup cream cheese, softened
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1/4 cup chopped green onions
- 1/4 cup diced bell peppers
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Combine the refried beans, cream cheese, shredded cheese, salsa, green onions, bell peppers, garlic powder, onion powder, salt, and pepper in a mixing bowl. Mix until well combined.
- Spread the mixture evenly over each tortilla.
- Roll up each tortilla tightly and wrap in plastic wrap.
- Chill in the refrigerator for at least 30 minutes.
- Slice the rolls into pinwheels once chilled.
- Serve with additional salsa or dipping sauce if desired.
Notes
These roll ups can be made a day in advance and stored in the refrigerator. They can also be frozen for up to a month.
