Description

Colorful bell peppers filled with a hearty mixture of ground beef, rice, beans, corn, and cheese, baked to perfection.


Ingredients

Scale
  • 4 bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat, then add ground beef and taco seasoning. Cook until browned.
  4. Stir in cooked rice, black beans, corn, salt, and pepper until well mixed.
  5. Stuff the mixture into each bell pepper.
  6. Place stuffed peppers in a baking dish and sprinkle cheese on top.
  7. Cover with foil and bake for 30 minutes, then remove the foil and bake for another 10 minutes or until the peppers are tender and cheese is melted.
  8. Serve hot and enjoy!

Notes

Experiment with different cheese blends for varied flavors and textures. For added heat, include diced jalapeños or hot sauce.
