Colorful bell peppers filled with a hearty mixture of ground beef, rice, beans, corn, and cheese, baked to perfection.

- 4 bell peppers
- 1 lb ground beef
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Heat olive oil in a skillet over medium heat, then add ground beef and taco seasoning. Cook until browned.
- Stir in cooked rice, black beans, corn, salt, and pepper until well mixed.
- Stuff the mixture into each bell pepper.
- Place stuffed peppers in a baking dish and sprinkle cheese on top.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for another 10 minutes or until the peppers are tender and cheese is melted.
- Serve hot and enjoy!
Notes
Experiment with different cheese blends for varied flavors and textures. For added heat, include diced jalapeños or hot sauce.
