Description

A vibrant celebration of flavors, this Mexican Street Corn is easy to make and a perfect addition to any gathering.


Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Fill a large pot with water and bring it to a boil. Add the corn and cook for about 5-7 minutes until tender.
  2. Mix mayonnaise, lime juice, chili powder, salt, and pepper in a bowl while the corn is cooking.
  3. Drain the corn and cool slightly once it’s cooked.
  4. Brush the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle with cotija cheese and additional chili powder, if desired.
  6. Garnish with chopped cilantro and serve immediately.

Notes

For a lighter version, consider substituting Greek yogurt for mayonnaise.
