A vibrant celebration of flavors, this Mexican Street Corn is easy to make and a perfect addition to any gathering.
Ingredients

- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Fill a large pot with water and bring it to a boil. Add the corn and cook for about 5-7 minutes until tender.
- Mix mayonnaise, lime juice, chili powder, salt, and pepper in a bowl while the corn is cooking.
- Drain the corn and cool slightly once it’s cooked.
- Brush the mayonnaise mixture evenly over each ear of corn.
- Sprinkle with cotija cheese and additional chili powder, if desired.
- Garnish with chopped cilantro and serve immediately.
Notes
For a lighter version, consider substituting Greek yogurt for mayonnaise.
