Description

A delightful fusion of Italian gnocchi and Mexican street corn, featuring a creamy, zesty sauce and garnished with cotija cheese.


Ingredients

  • 1 pound gnocchi
  • 2 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime (juiced)
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. Add the corn to a large skillet, and cook over medium heat until lightly charred, about 5 minutes.
  3. Mix the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
  4. Add the cooked gnocchi to the skillet with the corn. Pour the sauce over and toss to combine.
  5. Remove from heat and stir in the crumbled cotija cheese.
  6. Serve warm, garnished with fresh cilantro.

Notes

Use fresh corn for better flavor and consider adding more chili for heat. This dish is best enjoyed fresh.
