- 1 pound gnocchi
- 2 cups corn (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 lime (juiced)
- 1/2 cup crumbled cotija cheese
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the gnocchi according to package instructions until they float. Drain and set aside.
- Add the corn to a large skillet, and cook over medium heat until lightly charred, about 5 minutes.
- Mix the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a bowl.
- Add the cooked gnocchi to the skillet with the corn. Pour the sauce over and toss to combine.
- Remove from heat and stir in the crumbled cotija cheese.
- Serve warm, garnished with fresh cilantro.
Notes
Use fresh corn for better flavor and consider adding more chili for heat. This dish is best enjoyed fresh.
