Description
A delicious Mexican street food featuring grilled corn topped with creamy sauce, cotija cheese, and lime.
Ingredients

- 4 cobs sweet corn (peeled)
- 3 tablespoons butter (melted)
- ¼ cup cotija cheese (grated)
- Chopped cilantro (optional for garnishing)
- Tajin spice (for garnishing, optional)
- ¾ teaspoon tajin spice
- 3 tablespoons mayo
- 3 tablespoons Mexican style cream
- ½ teaspoon salt
- ½ teaspoon paprika
- 2 tablespoons chopped cilantro
- ½ whole lime (juiced, about 1 tablespoon)
Instructions
- Preheat the grill to medium heat.
- Mix together the sauce ingredients: mayo, Mexican style cream, tajin spice, salt, paprika, and lime juice, and set it in the fridge until you are ready for it.
- Melt the butter and brush the corn cobs with it.
- Wrap the corn cobs in aluminum foil and grill for about 15-18 minutes until cobs are blistered, flipping them around every 3-5 minutes or so.
- Remove from grill and unwrap the corn.
- Let the cobs cool for a few minutes and then brush the chilled sauce mixture on them.
- Top with cotija cheese, additional tajin sauce, and chopped cilantro.
- Serve immediately and enjoy!
Notes
For a gluten-free version, ensure all sauces and seasonings are gluten-free. Adjust seasoning to taste.
