- 1 cup Monterey Jack cheese, shredded
- 1 cup Oaxaca cheese, shredded
- 1/2 cup diced tomatoes

- 1 jalapeño, diced
- Tortilla chips, for serving
- Sour cream, for serving
- Salsa, for serving
Instructions
- Cook the chorizo in a skillet over medium heat until browned.
- Stir in the diced tomatoes, onion, jalapeño, and cilantro, and cook for a few minutes until softened.
- Reduce the heat to low and add the Monterey Jack and Oaxaca cheese, stirring until melted and combined.
- Serve warm with tortilla chips, sour cream, and salsa.
