A quick and easy Mediterranean-inspired dish featuring flaky cod, vibrant cherry tomatoes, and briny Kalamata olives.

- 4 fillets of cod (6 oz each)
- 3 tablespoons of olive oil
- 1 cup of cherry tomatoes, halved
- 1/2 cup of Kalamata olives, pitted
- 3 garlic cloves, minced
- 1 lemon, thinly sliced
- 2 tablespoons of fresh parsley, chopped
- 1 teaspoon of dried oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together olive oil, minced garlic, dried oregano, salt, and black pepper in a bowl.
- Lightly grease a baking dish with a teaspoon of olive oil.
- Place the cod fillets in the dish, surrounding them with cherry tomatoes, olives, and lemon slices.
- Drizzle the olive oil mixture evenly over the cod and vegetables.
- Bake in the preheated oven for 20–25 minutes until the cod is opaque and flakes easily with a fork.
- Sprinkle fresh parsley over the top before serving, and plate each fillet with a generous portion of tomatoes, olives, and lemon slices.
Notes
Use fresh, high-quality fish and produce for the best flavor. Avoid overcrowding the dish for even cooking.
