Description

A quick and easy Mediterranean-inspired dish featuring flaky cod, vibrant cherry tomatoes, and briny Kalamata olives.


Ingredients

  • 4 fillets of cod (6 oz each)
  • 3 tablespoons of olive oil
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of Kalamata olives, pitted
  • 3 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 2 tablespoons of fresh parsley, chopped
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together olive oil, minced garlic, dried oregano, salt, and black pepper in a bowl.
  3. Lightly grease a baking dish with a teaspoon of olive oil.
  4. Place the cod fillets in the dish, surrounding them with cherry tomatoes, olives, and lemon slices.
  5. Drizzle the olive oil mixture evenly over the cod and vegetables.
  6. Bake in the preheated oven for 20–25 minutes until the cod is opaque and flakes easily with a fork.
  7. Sprinkle fresh parsley over the top before serving, and plate each fillet with a generous portion of tomatoes, olives, and lemon slices.
