Description

A delightful vegan dish featuring crispy tofu, garlic, and sun-dried tomatoes that creates a multi-layered flavor profile, perfect for family dinners or gatherings.


Ingredients

  • 16 ounces super firm tofu (or extra-firm, pressed well)
  • 4 tablespoons cornstarch
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons avocado oil (or other high-heat safe oil)
  • 5 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt (more or less to taste)
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup Cashew Cream (or other vegan cream)
  • 2 cups baby spinach (sliced or chopped)
  • 4-5 fresh basil leaves (chopped)
  • 1/2 cup Vegan Parmesan (optional)


Instructions

  1. Press the tofu to remove excess moisture, which will help achieve that crispy texture.
  2. Cube the pressed tofu into bite-sized pieces.
  3. Toss the cubed tofu in a mixing bowl with cornstarch, nutritional yeast, salt, and black pepper until well coated.
  4. Heat avocado oil in a large skillet over medium-high heat.
  5. Add the coated tofu to the skillet in a single layer.
  6. Pan fry the tofu until golden and crispy, about 3-4 minutes per side.
  7. Remove the tofu from the skillet and set it aside.
  8. Sauté minced garlic in the same skillet until fragrant, about 1 minute.
  9. Add sun-dried tomatoes, oregano, and red chili flakes; stir for 2-3 minutes.
  10. Pour in vegetable broth and add tomato paste; let simmer for 5-7 minutes.
  11. Stir in Cashew Cream and adjust seasoning with salt and black pepper to taste.
  12. Add the baby spinach to the sauce, cooking until wilted.
  13. Fold the crispy tofu back into the sauce and gently mix.
  14. Finish with chopped fresh basil and optional Vegan Parmesan before serving.

Notes

For best results, press tofu well and always preheat your skillet before cooking.
