Description

Delightful dessert bars with rich mango flavor and a buttery crust, perfect for sharing or enjoying on any occasion.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 cup mango puree
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 tablespoon grated lime zest
  • 1/2 cup raspberry puree (optional for swirl)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Mix flour, butter, powdered sugar, and salt until crumbly. Press into the bottom of the prepared dish and bake for 15 minutes.
  3. Whisk together mango puree, eggs, granulated sugar, lime juice, and lime zest in another bowl. Pour over the baked crust.
  4. Drop spoonfuls of raspberry puree onto the mango filling if using, and swirl gently with a knife.
  5. Bake for an additional 25-30 minutes or until set.
  6. Let cool completely before cutting into bars.

Notes

Use fresh mango when in season for the best flavor. Chill the bars in the fridge after baking to enhance texture.
