- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 cup mango puree
- 3 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 tablespoon grated lime zest
- 1/2 cup raspberry puree (optional for swirl)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- Mix flour, butter, powdered sugar, and salt until crumbly. Press into the bottom of the prepared dish and bake for 15 minutes.
- Whisk together mango puree, eggs, granulated sugar, lime juice, and lime zest in another bowl. Pour over the baked crust.
- Drop spoonfuls of raspberry puree onto the mango filling if using, and swirl gently with a knife.
- Bake for an additional 25-30 minutes or until set.
- Let cool completely before cutting into bars.
Notes
Use fresh mango when in season for the best flavor. Chill the bars in the fridge after baking to enhance texture.
