Description
Delicious and fun cupcakes topped with colorful Lucky Charms cereal.
Ingredients

- 1 box of vanilla cake mix
- 3 large eggs
- 1 cup of water
- 1/2 cup of vegetable oil
- 1 cup of Lucky Charms cereal (plus extra for topping)
- 1 cup of butter, softened
- 4 cups of powdered sugar
- 2-3 tablespoons of milk
- 1 teaspoon of vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- In a large bowl, combine the cake mix, eggs, water, and vegetable oil. Mix until well combined.
- Fold in the Lucky Charms cereal gently into the batter.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely on a wire rack.
- In a separate bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well.
- Add milk and vanilla extract to the butter mixture and beat until smooth and fluffy.
- Frost the cooled cupcakes with the buttercream frosting.
- Top each cupcake with additional Lucky Charms cereal for decoration.
Notes
- For a more colorful frosting, consider adding food coloring.
- Store cupcakes in an airtight container at room temperature for up to 3 days.
