Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup Biscoff cookie butter
- 1/2 cup crushed Lotus cookies
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- Whisk together flour, cocoa powder, baking powder, and salt in a bowl.
- Mix the melted butter and sugar in another bowl until combined. Add eggs and vanilla, and mix well.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the crushed Lotus cookies.
- Pour half of the brownie batter into the pan, then dollop half of the Biscoff cookie butter on top, and swirl it with a knife.
- Pour the remaining batter on top, followed by the rest of the Biscoff cookie butter, and swirl again.
- Bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
- Allow to cool before slicing and serving.
Notes
These brownies can be stored in an airtight container for up to 3 days at room temperature.
