- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1/4 cup water (as needed)
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 2 tablespoons lemon zest
- 3 large eggs
- 2 large egg whites
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- Mix flour, butter, powdered sugar, and salt in a bowl until crumbly.
- Add egg yolk and mix. Slowly add water until dough forms.
- Roll the dough out and press it into a tart pan.
- Blind bake the crust for 15-20 minutes until golden.
- Whisk together sugar, lemon juice, lemon zest, eggs, and egg whites in another bowl until smooth.
- Pour the lemon mixture into the baked tart shell.
- Bake for an additional 20-25 minutes until set.
- Cool, then chill in the refrigerator.
- Serve with a dollop of heavy cream if desired.
