Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1/4 cup water (as needed)
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 3 large eggs
  • 2 large egg whites
  • 1/4 cup heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix flour, butter, powdered sugar, and salt in a bowl until crumbly.
  3. Add egg yolk and mix. Slowly add water until dough forms.
  4. Roll the dough out and press it into a tart pan.
  5. Blind bake the crust for 15-20 minutes until golden.
  6. Whisk together sugar, lemon juice, lemon zest, eggs, and egg whites in another bowl until smooth.
  7. Pour the lemon mixture into the baked tart shell.
  8. Bake for an additional 20-25 minutes until set.
  9. Cool, then chill in the refrigerator.
  10. Serve with a dollop of heavy cream if desired.
