Description

Delightful rolls infused with zesty lemon and nutty poppy seeds, perfect for any gathering or cozy morning.


Ingredients

Scale
  • 1 cup warm 2% milk
  • 2 1/2 teaspoons instant dry yeast
  • 2 large eggs
  • 1/2 cup salted butter (melted)
  • 1 teaspoon salt
  • 1 tablespoon poppy seeds
  • 1/2 cup granulated sugar
  • 4-4 1/2 cups bread flour
  • 10 ounces lemon curd
  • 1/2 cup heavy cream
  • 1 1/2 cups powdered sugar
  • 1 tablespoon salted butter (melted)
  • 1-2 tablespoons fresh lemon juice
  • 1-2 tablespoons heavy cream


Instructions

  1. Pour the warm milk in the bowl of a stand mixer and sprinkle the yeast overtop.
  2. Add the eggs, butter, salt, poppy seeds, and sugar.
  3. Add in 4 cups of flour and mix until barely combined. Let it rest for 5 minutes.
  4. Scrape the dough and attach the dough hook.
  5. Beat on medium speed, adding more flour if needed, and knead until elastic (5-7 minutes).
  6. Transfer to a greased bowl, cover, and let it rise until nearly double.
  7. Turn out the dough onto a floured surface and roll into a 24×15 inch rectangle.
  8. Spread lemon curd over the dough and roll it up tightly.
  9. Cut into 12 slices.
  10. Place rolls in a greased baking pan, cover, and let them rise for 20 minutes.
  11. Preheat oven to 375ºF.
  12. Pour warm heavy cream over the rolls.
  13. Bake for 25-27 minutes until golden brown.
  14. Prepare the glaze by mixing powdered sugar, melted butter, and lemon juice, adding heavy cream until the desired consistency.
  15. Drizzle glaze over cooled rolls.

Notes

For a citrus boost, consider adding lemon zest to the dough.
