Instructions
- Preheat your oven to 350°F (175°C).
- Beat together the softened butter and granulated sugar in a large bowl until light and fluffy.
- Add the egg, lemon zest, and lemon juice, mixing until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
- Scoop tablespoon-sized amounts of the dough and roll them into balls.
- Roll each ball in powdered sugar to coat.
- Place the sugar-coated balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set but the centers are still slightly soft.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For sugar substitutes, consider stevia, monk fruit, or allulose. Avoid honey and maple syrup.
