Description
A comforting dish featuring salmon, crispy potatoes, and vibrant broccoli, all enhanced by a buttery lemon sauce.
Ingredients
Scale
- 4 skin-on salmon fillets, about 6 ounces each
- 2-3 medium Russet or Yukon Gold potatoes, cut into ¾ to 1 inch pieces
- 1 head of fresh broccoli, cut into florets
- 4 tablespoons unsalted butter
- 2 fresh lemons, juice and zest
- 3-4 cloves garlic, minced
- 2-3 tablespoons olive oil
- ½ teaspoon coarse sea salt
- ¼ teaspoon freshly ground black pepper
- Pinch of dried dill or fresh parsley (optional)
Instructions
- Preheat your oven to 425°F (220°C). Toss the potato pieces with 1-2 tablespoons of olive oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper on a large baking sheet. Spread them out in a single layer and roast for 15 minutes.
- Toss the broccoli florets with 1 tablespoon of olive oil, ¼ teaspoon of salt, and a pinch of black pepper in a medium bowl. Add the seasoned broccoli florets to the baking sheet with the potatoes after 15 minutes of roasting and return to the oven for another 15-20 minutes, until the potatoes are golden brown and the broccoli is tender.
- Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
- Melt 4 tablespoons of unsalted butter over medium-low heat in a small saucepan. Stir in the minced garlic, the juice of half a lemon, and the lemon zest. Season with a pinch of salt and pepper to taste.
- Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Place the salmon fillets, skin-side down, into the skillet and sear for 4-5 minutes until the skin is crispy.
- Carefully flip the salmon fillets and transfer the skillet to the oven with the vegetables. Cook for an additional 5-8 minutes, or until the salmon is cooked through.
- Remove everything from the oven and drizzle the warm lemon butter sauce over the salmon. Serve immediately with the crispy potatoes and broccoli on the side.
