Description

Delightful Lemon Blueberry Waffles combine zesty lemon flavor with juicy blueberries, perfect for a comforting breakfast.


Ingredients

  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon zest
  • 1 3/4 cup all-purpose flour
  • 1 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cup milk
  • 1 tablespoon lemon juice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 stick unsalted butter (melted and slightly cooled)
  • 1 cup blueberries
  • Nonstick cooking spray (oil or melted butter)
  • Maple syrup
  • Powdered sugar
  • Whipped cream


Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. Combine the sugar and lemon zest in a large bowl. Rub the mixture with your fingertips.
  3. Add the flour, baking powder, baking soda, and salt to the bowl and set aside.
  4. In another bowl, whisk together the milk, lemon juice, eggs, and vanilla.
  5. Whisk the wet mixture into the flour mixture until a batter is formed. Then whisk in the melted butter until just incorporated.
  6. Fold in the blueberries with a spatula until combined.
  7. Spray both sides of the preheated waffle iron with nonstick cooking spray.
  8. Pour some of the batter onto the greased waffle iron and cook until golden brown, about 3-5 minutes.
  9. Repeat with the remaining batter.
  10. Serve with maple syrup, powdered sugar, or whipped cream.
