Description

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Zest of 1 lemon
  • 1/2 cup buttermilk
  • 1 cup fresh berries (such as blueberries, raspberries, or strawberries)
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon juice
  • Fresh mint leaves (for garnish, optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  4. Cream together the softened butter and granulated sugar in a mixer until light and fluffy.
  5. Add eggs, one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and lemon zest until combined.
  7. Alternate adding the flour mixture and buttermilk, starting and ending with flour mixture. Mix until just combined.
  8. Gently fold in the fresh berries.
  9. Pour the batter into the prepared cake pan.
  10. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  12. Beat together mascarpone cheese, powdered sugar, and lemon juice until combined and smooth.
  13. Spread the mascarpone mixture on top of the cooled cake.
  14. Garnish with fresh mint leaves if desired.

Notes

Use fresh ingredients for the best flavor and allow cream cheese and butter to reach room temperature for better mixing.
