- 1 teaspoon baking powder

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- Zest of 1 lemon
- 1/2 cup buttermilk
- 1 cup fresh berries (such as blueberries, raspberries, or strawberries)
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 tablespoon lemon juice
- Fresh mint leaves (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream together the softened butter and granulated sugar in a mixer until light and fluffy.
- Add eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract and lemon zest until combined.
- Alternate adding the flour mixture and buttermilk, starting and ending with flour mixture. Mix until just combined.
- Gently fold in the fresh berries.
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Beat together mascarpone cheese, powdered sugar, and lemon juice until combined and smooth.
- Spread the mascarpone mixture on top of the cooled cake.
- Garnish with fresh mint leaves if desired.

Use fresh ingredients for the best flavor and allow cream cheese and butter to reach room temperature for better mixing.
