Ingredients

  • 3.5 tbsp key lime juice
  • 2 tbsp powdered swerve (or substitute 1 tbsp honey)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers
  • 1/4 cup toasted coconut (unsweetened)
  • 1 scoop vanilla protein powder


Instructions

  1. Combine Greek yogurt, key lime juice, protein powder, lime zest, powdered swerve, and vanilla extract in a medium mixing bowl. Mix until smooth.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin layer.
  4. Sprinkle crushed graham crackers, toasted coconut, and lime zest over the yogurt layer.
  5. Place the baking sheet in the freezer for at least 2-3 hours, or until frozen.
