- 1 lb flank steak
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup corn (canned or frozen)
- Extra cilantro for garnish
Instructions
- In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
- Marinate the flank steak in the mixture for at least 30 minutes.
- Preheat a grill or skillet over medium-high heat.
- Cook the steak for about 5-7 minutes on each side, or until desired doneness.
- Let the steak rest for 5 minutes before slicing it thinly.
- In bowls, layer cooked rice, sliced steak, cherry tomatoes, avocado, and corn.
- Garnish with extra cilantro and serve with lime wedges.
Notes
- For a spicier kick, add jalapeños to the bowls.
- This recipe can be made with chicken or tofu for a different protein option.
- Leftover steak can be stored in the refrigerator for up to 3 days.
