Description

A vibrant dish combining succulent chicken with spicy jalapenos and colorful bell peppers, perfect for quick weeknight dinners.

Ingredients

Scale
  • 2 chicken breasts
  • 2 jalapenos, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season the chicken breasts with salt and pepper and add them to the pan. Cook until browned on both sides and cooked through, about 6-7 minutes per side.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, add onions, garlic, jalapenos, and bell peppers. Sauté until the vegetables are tender, about 5 minutes.
  5. Drizzle honey over the vegetables and stir to coat.
  6. Return the chicken to the pan and mix to combine with the vegetables.
  7. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with cilantro if desired and serve hot.

Notes

For a lower-calorie option, consider using sugar-free substitutes for honey. Ensure chicken is not overcooked for the best texture.
