Description

Deliciously soft and slightly sweet cookies inspired by traditional Irish soda bread.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 cup raisins or currants


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Add the softened butter and mix until crumbly.
  4. In a separate bowl, combine the buttermilk and egg, then add to the dry ingredients.
  5. Fold in the raisins or currants until evenly distributed.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let cool on a wire rack before serving.

Notes

  • For a richer flavor, you can add a teaspoon of vanilla extract.
