Description

Celebrate with these delightful ice cream sandwiches made of soft, chewy cookies and your favorite ice cream, perfect for summer gatherings.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chocolate chips
  • 1 pint of your favorite ice cream


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
  3. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually combine the dry ingredients with the wet mixture, mixing until well blended.
  6. Stir in the chocolate chips until evenly distributed.
  7. Scoop tablespoon-sized portions of cookie dough onto parchment-lined baking sheets, leaving enough space between each scoop.
  8. Bake for 10–12 minutes, or until the edges are golden brown but the centers are still soft.
  9. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
  11. Scoop your favorite ice cream onto the bottom of one cookie and press another cookie on top to create a sandwich.
  12. Repeat with remaining cookies and ice cream.
  13. Freeze the sandwiches for at least 30 minutes to ensure they hold their shape.
