Description

A quick and delightful side dish combining sweet corn, honey butter, and cream cheese, perfect for any meal.


Ingredients

  • 2 lbs (900g) Frozen Gold Corn (or fresh corn cut off the cob)
  • 1/2 cup (115g) Salted Butter
  • 2 tbsp (42g) Raw Honey
  • 4 oz (115g) Cream Cheese (softened and cubed)
  • 1/4 cup (60ml) Heavy Cream
  • 1/2 tsp Cracked Black Pepper
  • 1/2 tsp Salt
  • 2 tbsp (6g) Fresh Green Chives (finely chopped for garnish)


Instructions

  1. Melt the salted butter in a large skillet over medium heat until it begins to foam.
  2. Add the frozen corn and stir to coat with butter.
  3. Cook for about 5-7 minutes, allowing the corn to soften and heat through.
  4. Drizzle the raw honey over the corn, mixing it well for an even glaze.
  5. Incorporate the softened cream cheese into the skillet, stirring until it melts and becomes creamy.
  6. Pour in the heavy cream and continue to stir until the mixture is well combined and velvety.
  7. Season with cracked black pepper and salt to taste, adjusting as necessary.
  8. Garnish with finely chopped fresh green chives just before serving.

Notes

Be careful not to overcook the corn to avoid mushy kernels.
