Description

Learn how to make creamy and delicious feta cheese at home with this simple recipe.


Ingredients

Scale
  • 1 gallon whole milk
  • 1/4 cup white vinegar
  • 1/4 teaspoon rennet
  • 1 teaspoon salt


Instructions

  1. Heat the milk in a large pot over medium heat until it reaches 190°F.
  2. Remove from heat and stir in the vinegar. Let it sit for 10 minutes.
  3. Add the rennet and stir gently for 30 seconds.
  4. Cover and let it sit undisturbed for 1 hour.
  5. Cut the curds into small cubes and let them sit for another 5 minutes.
  6. Gently stir the curds and then pour them into a cheesecloth-lined colander.
  7. Let the curds drain for 1 hour, then sprinkle with salt and mix well.
  8. Transfer the feta to a container and cover with brine (water and salt solution).
  9. Refrigerate for at least 24 hours before using.

Notes

  • Use high-quality milk for the best flavor.
  • Adjust the salt to taste.
  • Feta can be stored in the brine for up to a month.
